E524 SODIUM HYDROXIDE

Sodium hydroxide, otherwise known as caustic soda (NaOH) is a compound that acts as an acidity regulator (it is a strong alkalizing agent) and a synthetic technological adjuvant. It is used to enhance the industrial peeling of fruits, to blacken olives and to prepare caramel.

It comes in the form of lumps, scales, sticks, melted masses or other forms, white or almost white. The solutions are clear or slightly turbid, colorless or slightly colored, very caustic and hygroscopic and, when exposed to air, absorb carbon dioxide, forming sodium carbonate. Very soluble in water. Easily soluble in ethanol.

Sodium hydroxide is an additive used mainly in foods for infants and young children, in margarines, in chocolate snacks, in ice cream, in cocoa powder, in certain flours, in baked desserts and in jellies.

It is often considered a harmless compound, but even here research is contradictory, so it is better not to consume large quantities.
