Piperine or capsicin: which one is more spicy?
Spiciness is measured by the so-called Scoville Scale . At the top of this scale we find pure capsaicin, which is no coincidence that it is the main active ingredient that gives the chili its typical spiciness. The values of other capsaicinoids and pepper spray used by the police are also very high. Although not shown in the image, the most spicy substance found in nature is Resiniferatoxin .
The table on the side, taken from wikipedia, also shows the scoville gradation values for the different varieties of chilli. Although not reported, a value of 100, 000 units is attributed to piperine, against the 16, 000, 000 attributed to capsaicin.
Capsaicin is therefore 160 times more spicy than piperine.
