Generalities and description
The sour cherry (also called visciola ) is the fruit of amareno, an arboreal plant belonging to the family Rosaceae, Genus Prunus, Specie cerasus . The binomial nomenclature of amareno is Prunus Cerasus .
Amarena is a tree that reaches 8 meters and is characterized by green leaf-shaped leaves; it flowers between April and the end of May and produces spherical fruits very similar to cherries. Black cherry, compared to cherry, uses a small stalk. At the center of the fruit is a seed / hazel that encloses the typically bitter almond (due to the presence of amygdalin which gives rise to hydrocyanic acid).
The black cherry tree comes from the Caucasian area (east), from which it was imported by the Romans. Amareno grows without difficulty on all types of soil and does not disdain the climate of the typical Italian plains and hills.
Amarena is a very popular base for the production of syrup, jams, candied fruit and sour cherry wine. The peduncle, cultured and dried, has good diuretic properties, while the leaves can be used in the formulation of a liqueur.

Black cherry is an average energy fruit with a prevalence of simple sugars. The fiber intake does not excite. From the salty point of view it provides good amounts of potassium and as far as vitamins are concerned, there is a discreet presence of retinol equivalence and vit. C.
