Potassium malate is the potassium salt of malic acid (E296). It is a compound used as a buffer or as a flavoring. It can be found in products such as ice cream, fried products, etc.

There is no maximum consumption for the moment, but the use of some of its isomers (D, L- and D-isomers) is not allowed in baby food (due to the absence of enzymes needed to metabolize these substances ).
At the moment, there are no known negative side effects concerning the use of potassium malate as a food additive.
