What to eat if you suffer from celiac disease

In the celiac disease diet, the foods belonging to the various product classes are divided into 3 lists:

  1. PERMISSIONS (gluten free)
  2. AT RISK
  3. FORBIDDEN OR PROHIBITED (with gluten)

Among the foods "at risk" are indicated some products that can be gluten-free, therefore suitable for celiacs, but which may also have an unknown botanical origin or be "at risk of contamination in the various stages of production". We advise you on this subject the GLUTEN-FREE TRADE PRONTUARY OF PRODUCTS TRADE developed by the Italian Celiac Association. This handbook indicates the food products guaranteed by the gluten-free producers.

Cereals and Flour

Allowed foods

  • yoghurt with "FORBIDDEN CEREALS" malt and cereals
  • blue cheeses (like: gorgonzola, roquefort, Danish Blue)

Meat, Fish, Eggs

Allowed foods

  • all kinds of meat, poultry, fish, crustaceans, molluscs
  • raw ham

  • cured meats and sausages raw, cooked, fresh and seasoned: cooked ham, coppa, pancetta, speck, bresaola, pancetta, mortadella (or bologna), wurstel, salami,

Prohibited foods
