THE PROPERTIES OF SOYBEAN

Soy is a legume like beans, chickpeas or lentils, and like all legumes it is rich in B vitamins, iron and potassium.

Soy is not a traditional Mediterranean food, but has been introduced to Europe from Asia.

Unlike the other legumes, soy:

It is richer in proteins and lipids (saturated, polyunsaturated and f osfolipid like lecithin, which has emulsifying properties and decreases cholesterol levels in the blood)

It is more digestible

It is rich in phytosterols and in particular of two primary isoflavones (genistein and daidzein). Phytoestrogens are substances with estrogenic action, ie they are able to bind to the estrogen receptor, although this activity is between one thousandth and one ten thousandth of that of estradiol, the main female hormone. According to some studies phytoestrogens, particularly useful to women in the postmenopausal period, prevent tumors and in particular those of the breast, prostate and protect from osteoporosis.

In 100 g of dried product there are about 23 g of carbohydrates, 37 g of proteins and 19 g of lipids, for a total caloric intake of 409 kcal.

MEATBALLS OF SOYBEAN

PREPARATION: The first thing to do is to get dried soybeans in order to guarantee the quality of the product. As an alternative it is possible to use soy flour but check the origin and processing of the product by carefully reading the nutritional information.

If you have opted for the purchase of dried soybeans you have to soak them in water for about 12 hours. Then they should be boiled and chopped in a food processor as finely as possible.

Boil the potatoes in a saucepan until they are well cooked, peel them, finely chop them and add them to the soy.

Add the beaten egg, along with the chopped garlic and chilli.

Stir to form a homogeneous mixture.

Form three pressed discs about 2 cm thick and bake them in the oven or in a pan at medium high temperature for about 10 minutes.

From a nutritional point of view this dish represents a classic hyperproteic, hyperlipidic and hypoglucidic meal, rich in mineral salts, iron, potassium, vitamins A, C and group B.

The ratio of saturated and unsaturated lipids is well balanced.

The quantities of food are referred to the standard reference man (1.75 x 75Kg), physically active, with active life habits that consume at least four complete meals a day.

Some small changes to the recipe just described allowed us to turn the soy meatballs into a dish that is also a friend of our vegan friends, recycling the okara or the residue of homemade soy milk.
