- E401 SODIUM ALGINATE
Sodium alginate is the sodium salt of alginic acid (see E400), a natural polysaccharide. It also has a predominantly thickening and emulsifying function.
Sodium alginate, as well as other salts, can be contained in different food products: desserts, barbecue sauces, ice cream creams, ricotta cake mixes, puddings, pretreated sliced cheese etc.
At the moment. at the concentrations normally used, there are no known negative side effects caused by sodium alginate, while, at high doses, there may be a decrease in the intestinal absorption of iron and other minerals.

- E402 POTASSIUM ALGINATE (equal) → used above all, in addition to the foods mentioned above, in products with low sodium content
- E403 AMMONIUM ALGINATE (equal) → used above all, in addition to the foods mentioned above, in non-alcoholic beverages, food colorings, icings, etc.
- E404 CALCIUM ALGINATE (same) → used above all, in addition to the foods mentioned above, in frozen ice cream and bakery products.
