Aspic: what is it?

The aspic is a preparation that involves the use of gelatin. There are sweet and savory ones; the former are used as desserts, while savory aspics are appetizers or dishes.

The aspic is a preformed food, whose appearance is defined by the structure of the container used.

The fundamental concept for its production is that the liquids present inside the aspic (abundant, consisting of water, milk, broth, juice etc.) must be gelled with a food additive, a food or a hydrocolloid nutrient; These gelling components include:

  • gelatine,
  • alginic acid and alginates,
  • guar gum,
  • agar-agar, pectins,
  • meat and fish collagen,
  • egg whites etc.

The process of gelling pectin can only take place with a lowering of the temperature (in the refrigerator, not in the freezer).

Famous aspics

Some of the most famous aspics are: aspic of vegetables (legumes, tubers, roots and vegetables), aspic of white meat (for example of chicken, turkey, rabbit), aspic of fish (for example of tuna), aspic of cold cuts and cheeses (cold cuts and mixed cheeses), aspic of fruit juice (for example that of blueberry or grape), aspic of whole fruit (only one or mixed fruit salad), aspic with creams and mousses (drowned, like those stuffed with semifreddo or foam) and aspic with mixed bases (for example, with sponge cake, vanilla or chocolate custard etc.).

The aspic can be formulated with ingredients with a very low energy impact, which makes it a dietary, purifying and slimming food.
