Calcium tartrate is the calcium salt of tartaric acid. It is an acidity regulator and a preservative.
It can be contained in various products, such as fish and fruit preserves, products with algae, drugs, etc. This additive shares most of its food uses with metatartaric acid.
Calcium tartrate is transformed and metabolized by our body to tartaric acid and for this reason it is not harmful and no negative side effects are known about it.
