E418 GELLAN GUM

Gellan gum is an additive of natural origin with a predominantly thickening and gelling function.

It can be added by the food industry to different foods, such as jams, jellies, jams, reduced cooking products. It is also a typical ingredient of molecular cuisine.

The possible side effects caused by this additive are currently unknown (very few studies have been done on the use of gellan gum as a food additive).
