What is Budwig cream?

The Budwig cream, which takes its name from its inventor (Dr. Johanna Budwig), is a recipe designed to facilitate the process of detoxification and cancer prevention, already proposed in the Kousmine diet system . In particular, according to the Kousmine-Budwig nutritional theory, breakfast would be the most important meal in terms of preventive and therapeutic efficacy. That's why Dr. Budwig has coined a real blend of specific ingredients to use daily in the diet.

Kousmine method

The Kousmine method is a nutritional system invented by Dr. Catherine Kousmine (Switzerland, 1904-1992), who dedicated her life to medical research in Switzerland, with particular interest on the impact of food on general health and cancer prevention.

The Kousmine method is based on the so-called detoxification process of the organism, as a prevention against various cancers.

The Kousmine diet is based on 5 fundamental principles, including above all a healthy diet and a healthy colon. Intestinal cleansing can also be facilitated by the use of enteroclisms.

According to this method, the essential characteristic that makes food a real "medicine" is the almost total absence of products of animal origin, associated with the exclusion of sugar, alcohol and "bad fats". Instead, portions of fresh fruit, oilseeds, vegetables and starchy grains (all of biological origin and naturally rich in antioxidants, vitamins, minerals, fibers and essential fatty acids) should instead be increased.

Dr. Johanna Budwig

Dr. Johanna Budwig (Germany, 1908 - 2003), a biochemist and pharmacologist specialized in fat, seven times a candidate for the Nobel Prize, was for many one of the best European scientists to work in cancer research.

Dr. Budwig's research has highlighted the negative effects of chemically and physically transformed lipids on human body cells.

To cause these effects would be the industrial processing of fats, responsible for the destruction of the electron field indispensable to cell membranes to function properly. Altering the metabolism of fats negatively affects the function of all organs and biological systems. This includes cell regeneration and the elimination of toxic waste that causes various chronic diseases, including fatal ones.

Budwig Cream Recipe

Note : choose only organic ingredients

  • 4 tablespoons of ricotta or low-fat yogurt
  • 2 tablespoons of unrefined vegetable oil, better than flax or sunflower seeds

Mix the ricotta or yogurt and the seed oil in a bowl with a fork, until you get a homogeneous and creamy mixture. Then, add to this mixture:

  • 1 small ripe banana or 2 teaspoons of honey
  • ½ lemon juice
  • 2 tablespoons of flax seeds (or 6 almonds or 6 hazelnuts or any other type of oily seed, with the exception of peanuts) freshly ground
  • 1-2 tablespoons of brown rice or millet or buckwheat or oats (not oatmeal) raw
  • 1 portion (about 150 g) of fresh seasonal fruit (strawberries, raspberries, cherries, grapes, apple, etc.).

Grind oil seeds and cereals with a mixer or crush them in a mortar. Crush the banana with a fork. Add all the ingredients to the first mixture and mix.

In addition to being an alternative source of minerals (potassium, calcium, phosphorus, magnesium, iron and zinc), this breakfast is rich in alpha linolenic acid (ALA - essential polyunsaturated omega 3), fiber, polyphenolic antioxidants and hydro- vitamins and lipo-soluble. The combination of these noble ingredients is what would make the recipe particularly effective in the treatment and prevention of chronic diseases.

80 g of lean cow ricotta, 20 g of linseed oil, 100 g of banana, 30 g of lemon juice, 20 g of almonds, 15 g of oats, 150 g of apple with peel.

As can be deduced from the table below, Budwig cream is a not too caloric food, whose energy is mainly supplied by lipids, followed by carbohydrates and finally by proteins. The fatty acids tend to be unsaturated, with an excellent percentage of the omega 3 and omega 6 essential polyunsaturated (alpha linolenic and linoleic acid); glucides are mainly simple (fructose and lactose) and peptides with a high biological value.

Fibers are abundant and insignificant cholesterol.

Among the minerals there are good concentrations of potassium, calcium and zinc. As far as vitamins are concerned, the levels of vitamin PP (niacin), vitamin A (retinol), vitamin C (ascorbic acid) and vitamin E (tocopherol) are appreciated. Budwig cream contains small amounts of lactose and may contain gluten; it is instead free of relevant doses of histamine.

Budwig cream is suitable for most dietary regimens, including those for metabolic disorders and against overweight. Care should be taken with intolerant people who are more sensitive to lactose, which could benefit from the replacement of ricotta or traditional yogurt with an equivalent of lactose or vegetable. Celiacs, on the other hand, are obliged to use gluten-free starchy seeds such as, for example, millet and buckwheat.

Budwig cream is a food that lends itself to a vegetarian diet but not a vegan one. The average portion is around 400-450 g (590-665 kcal).
