E525 POTASSIUM HYDROXIDE

Potassium hydroxide, otherwise known as caustic potash (KOH), is an alkalizing compound acting as an acidity regulator and a synthetic technological adjuvant. It comes in the form of lumps, scales, sticks, melted masses or other forms, white or almost white. Very soluble in water. Easily soluble in ethanol.

Potassium hydroxide is used, for example, to facilitate the industrial peeling of fruit and to darken olives.

It can be used in different types of products, such as various types of baby milk, chocolate powder and cocoa derivatives, black olives, ice cream, grape juice.

There are contradictory hypotheses about the side effects of this additive: some researchers claim it is harmless, others instead that can cause burning sensations in the mouth, throat, stomach up to hemorrhages and illnesses.

Therefore, in the light of these antithetical hypotheses, excessive consumption of potassium hydroxide is not recommended.
