The most famous chocolate cake in the world

The most famous chocolate cake in the world was born in the same period in which the main ingredient, after being almost forgotten for the social, political and economic turmoil of the time, came back on the market.

In fact, in the period between the beginning and the end of the American War of Independence and of the French Revolution, the spread of this delicious product (still not widespread) suffered an inexorable setback; this happened until, in 1823, a Swiss man named Francois Louis Cailler designed a machine capable of kneading the cocoa making it a mouldable paste to create the related tablets.

Shortly afterwards, in 1832, a young pastry chef who worked in the service of Austrian chancellor Metternich, used chocolate bars to compose a covering glaze for a cake filled with apricot jam. Have you understood that? It is indeed the Sachertorte!

Besides being the first, this cake (which, we recall, takes its name from its maker) represents the symbol of chocolate cakes (a real Chimera). The Sachertorte is a kind of "irrevocable Austrian icon" and, after almost two hundred years, continues to be proposed with pride and success at the Hotel Sacher in Vienna (where it represents an almost unmissable gastronomic tourist attraction).
