A universal symbol of rebirth of nature and the spirit, Easter eggs are an integral part of this holiday. Although in some families it is common to paint eggshells with bright colors, in the common imagination the easter egg is synonymous with surprises and chocolate.

To the delight of adults and children can be found with different tastes, decorations and surprises; addressing to specialized pastry shops, it is also possible to enclose in the shell one's own gift, embellished with a precious chocolate fruit of the ingenious craftsmanship and skill.

The origins of the festive ritual of Easter eggs are uncertain; some make it coincide with the period of the Crusades, when in 1176, to celebrate the end of the second expedition against the infidels, King Louis VII of France distributed eggs to the people. The custom of inserting a gift within the Easter eggs dates back to the early 1500s, at the court of King Francis I of France. A few centuries later, in the Russia of the tsars, the ritual of embellishing Easter eggs with meticulous decorations was perfected, an art that culminated in the famous and very precious eggs of Carl Fabergé. Starting from those years, the technological advances applied to the grinding and processing of cocoa allowed the production of the first chocolate Easter eggs. Today, these sweets represent for many a moment of undeniable pleasure, linked to the emotions that chocolate is able to arouse.

The ingredients, when well chosen, allow to obtain Easter eggs of incomparable refinement. For this reason, before buying them, it is worth paying attention not only to the price, but also to the product label. Often, in fact, the traditional cocoa butter is replaced with other lower quality oils or fats which, as well as the added aromas and additives, transform the Easter egg into a real substitute for the original. On the other hand, a high percentage of cocoa, the absence of vegetable oils or fats and a lower than average sugar content are a sign of quality.
