Carbohydrates - fundamental nutrients, especially for the energy role they play in our body. The term carbohydrates or glucides refers to a heterogone group of molecules involved in energy metabolism and in the structural function of eukaryotic cells. Introduced through the diet, the carbohydrates are initially digested by the salivary amylases in the buccal cavity (this explains the importance of a correct chewing) and then at the intestinal level by pancreatic amylase, dextrinase and disaccharidase. The simple sugars obtained are absorbed by the apical membrane of the enterocyte through passive diffusion systems, and facilitated transport, then released into the circulatory stream by the basolateral membrane. The time at which 50 grams of a given carbohydrate raise blood sugar levels, in relation to a standard, glucose or white bread, is called a glycemic index; this value correlated to the quantity of carbohydrates contained in a given food defines the concept of glycemic load. The choice of foods with low or high index / glycemic load, strongly influences the dietary quality of the diet in pathological individuals, healthy and athletes. Focusing on the athlete's diet, it is clear that the choice of the type of food and type of carbohydrate can adapt to different needs and supplementary perspectives.

  1. In the pre-race phase, to saturate the muscular reserves of glycogen → medium and low glycemic index carbohydrates, easy to digest.
  2. During endurance performance: to support performance and delay the onset of muscle fatigue → medium glycemic carbohydrates in liquid or gel form.
  3. Immediately before the sprint or the explosion of force : → carbohydrates with a high glycemic index, ready for assimilation and consumption, naturally in liquid form.
  4. In the post work out : to enhance the body's anabolic abilities → carbohydrates with a high glycemic index, to stimulate insulin secretion, combined with an amino acid source to improve protein synthesis and carbohydrates with a medium glycemic index to restore muscle glycogen stocks.

  4. Competitive action against tryptophan, which results in a reduction in the production of serotonin and the feeling of fatigue;
  5. At the buffering action.

Their requirement amounts to about 83 mg / kg / day, distributed in 40 mg / kg / day for Leucine, 23 mg / kg / day for isucine and 20 mg / kg / day for valine, which rises to double for endurance athletes, such as marathon runners and cyclists. B vitamins : the B vitamins, very present in animal products, legumes and whole grains, are part of numerous biological reactions, and in particular those of the oxidative metabolism of various nutrients, guaranteeing the body the realization of a correct catabolic and pro-energy phase.

Vitamin B1 : also known as thiamine, it is activated following a process of dual phosphorylation as TPP (thiamin pyrophosphate), and is part of the process of oxidative decarboxylation of pyruvate, in the Krebs cycle (allowing the passage from α-ketoglutarate to Succinil CoA), and in the pentose phosphate cycle. It is therefore essential in the oxidative metabolism of carbohydrates.

Its requirement is about 0.4 / 0.8 mg every 1000 kcal introduced.

Vitamin B2 : also known as riboflavin, reaches the liver through the circulatory stream, bound to albumin, where it is transformed into FMN and FAD. These two prosthetic groups, which are essential for metabolism in general, fall within the process of oxidative decarboxylation of pyruvate and in the krebs cycle, in the B-oxidation of fatty acids, in the oxidation of amino acids and in oxidative phosphorylation.

The recommended daily dose is 0.6mg per 1000 kcal introduced with the diet.

Vitamin B6 : also known as pyridoxine, it is transformed and phosphorylated in the liver into pyridoxal phosphate, an important coenzyme involved in numerous key reactions of amino acid metabolism (transamination and oxidative deamination), lipid (sphingolipid synthesis) and glucidic. Its daily requirement is around 1 / 1.5 mg, but even in this case deficiency episodes are very rare.

Nicotinamide: admitted to nicotinic acid which together with nicotinic acid represents vitamin B3 or PP . This vitamin is part of the constitution of two very important coenzymes, known as NAD and NADP, involved in many metabolic reactions, both oxidative and non-oxidative. Catabolic, anabolic, cell growth, differentiation and maintenance of cellular function are just some of the fields of activity of this vitamin

Vitamin B3 deficiencies, very rare, give rise to a pathological condition known as pellagra characterized by dermatitis, mental and cognitive disorders.
