E162 RED BEET OR BEETAN

Beetroot red is a dye of natural origin, red-purple, extracted from red beets ( Beta vulgaris ) by squeezing or extracting with water from the cut roots, and then enriching it with the active ingredient.

The dye is formed by different pigments belonging to the class of betalains.

The dye is mainly composed of:

betacyans (red) of which betanin represents 75-95%;

betaxanthin (yellow);

degradation products of betalains (light brown).

The squeezing liquid includes sugars, salts and / or proteins, in addition to colored pigments; the latter are naturally occurring compounds in red beets that can be eliminated by concentrating the solution.

The "red beet or betanin" additive can be present in various confectionery products, in fruit jellies, in chewing gum, in sauces and condiments, in packaged ice creams and in ice lollies.

Beetroot red is harmless to human health.
