Ammonium carbonate and ammonium bicarbonate are compounds obtained from ammonium sulfate and calcium carbonate; they are used as acidity regulators, support of additives, anti-caking agents and as raising agents.

Ammonium carbonate and ammonium bicarbonate can be contained in various products, such as in some desserts.

It comes in the form of white powder or hard, white or translucent masses or crystals. It becomes opaque behind exposure to air, eventually turning into white porous lumps or powder (of ammonium bicarbonate) due to the loss of ammonia and carbon dioxide. Soluble in water.

At the moment there are no known negative side effects on human health, except for the formation of gas in the stomach after ingestion.
