Saturated fats in coconut

Fresh coconut is one of the foods richest in saturated fats. Suffice it to say that it contains almost three times the salami cacciatore: in 100 grams of coconut there are in fact 31g the 11g present in a similar quantity of the typical Italian sausage.

It should be noted, however, that the saturated coconut fatty acids are predominantly medium chain (MCT).

The impact of these fatty acids on human metabolism seems clearly better than that of long-chain saturated fatty acids (typical of animal foods): unlike the latter, in fact, MCTs do not increase blood cholesterol levels, they are rapidly absorbable and, according to some studies, they would even help dispose of excess calories by stimulating fat oxidation and suppressing appetite.
