Hummus service

Hummus is served mainly as an appetizer and as a dressing sauce, both in dug pita bread and unleavened bread.

It is also proposed as an ingredient of meze (selection of hors d'oeuvres typical of the Middle East and Greece) or as an accompaniment to falafel and grilled foods such as: chicken, fish and eggplant.

Other ingredients that garnish the hummus are: diced tomatoes, diced cucumbers, coriander, parsley, caramelized onions, sautéed mushrooms, whole chickpeas, olive oil, boiled eggs, paprika, sumac, ful, olives, pickles and pine nuts.

Outside the Middle East, it is sometimes served with tortillas or crackers.

Ful Hummus is seasoned with a paste made from boiled beans (dried and cooked in a copper pot) and then mashed.

Hummus masubha / mashawsha is a hot blend of hummus, whole chickpeas and tahina.
