Calcium polyphosphate is an additive generally used to increase the food mass of some foods, such as meat and cured meats or some cheeses. It has emulsifying and stabilizing functions.
The consumption of high doses of this additive can entail some risks for human health such as digestive disorders, allergic reactions, etc. (this additive is prohibited in Australia).
