The purple-blue diet

PURPLE-BLUE COLOR FOOD : aubergines, radicchio, black grapes, berries (currants, blackberries, raspberries, blueberries ...) plums and figs.

Properties of Purple-Blue Plants

Purple / blue vegetables and fruits are important for health, as they reduce the risk of cardiovascular diseases and tumors; these foods also contain substances that are important for urinary function, vision and the structure of blood capillaries. Furthermore, all purple fruits and vegetables are rich in fiber.

The phytochemicals characteristic for this group of foods are anthocyanins and carotenoids.

Anthocyanins, which have a high antioxidant power, prevent atherosclerosis caused by high levels of cholesterol in the blood, urinary tract infections (especially berries), improve visual function, inhibit platelet aggregation, increase resistance capillary (especially wild berries) and are therefore useful against blood circulation disorders.

Carotenoids, on the other hand, prevent many types of cancer, cataracts, skin aging, neurodegenerative diseases and cardiovascular diseases.

  • Currant : rich in vitamin C (has an antioxidant action and participates in the production of collagen and carnitine) and potassium (reduces the risk of hypertension, cardiovascular diseases and protects the bone tissue).
  • Radicchio : rich in vitamin C, beta-carotene (precursor of vitamin A that participates in the growth, reproduction and maintenance of tissues and intervenes in the immune function and in vision) and potassium.
  • Figs : rich in potassium.
  • Blackberries : rich in potassium.
  • Plums : rich in potassium.
  • Aubergines : rich in magnesium.
  • Berries : we have already mentioned the benefits of wild berries at the beginning of the article (they cure capillary fragility and prevent urinary tract infections); these fruits also contain soluble fiber, which feeds the intestinal flora and regulates nutrient absorption.

According to some ancient popular beliefs, eating lots of eggplant leads to madness !! While, for others, aubergines have magical and aphrodisiac properties.

Purple-blue recipes

Soft fruit flan

Ingredients for 4 people)

  • 500 g of mixed berries (choose between blueberries, currants, blackberries, raspberries etc .;
  • 150 g of flour;
  • 100 g of butter;
  • 60 g of butter;
  • 1 lemon;
  • cinnamon powder.

Preparation

Wash and dry the berries.

Grease an ovenproof dish in which to place these fruits evenly, the juice of half a lemon and a little cinnamon.

In a bowl, mix the butter (cut into cubes), the sugar and the flour. Pour this mixture over the berries in a regular manner.

Bake in a preheated oven (at 220 degrees), until the surface turns golden (about 25 minutes).

Radicchio with sultanas

Ingredients for 4 people)

  • 100 g of black olives;
  • 8 anchovy fillets in oil;
  • 8 heads of Treviso radicchio;
  • Pine nuts;
  • sultana raisins;
  • extra virgin olive oil;
  • salt and pepper.

Preparation

Carefully wash the radicchio and cut the tufts into four parts, which you will place in a pan with 5 tablespoons of oil, salt and sultanas; cover with water and cook with lid on low heat for about 30 minutes.

Once cooked the radicchio, sprinkle with the olives deprived of the hazelnuts and with the anchovies; then let the remaining cooking liquid evaporate.

Season with pepper and garnish with pine nuts.

Purple-blue centrifuges

Summer Centrifuge 1

Ingredients for 4 people)

  • 2 peaches;
  • 500 g of blackberries;
  • 500 g of raspberries;
  • 1 lemon,
  • some mint leaves,
  • 1 glass of sparkling water.

Preparation

Wash the fruit and centrifuge it; add, now, the juice of a lemon and a glass of sparkling water. Garnish with a few mint leaves.

Centrifugato Estivo 2 (tonic at any time of day)

Ingredients for 4 people)

  • 6 figs;
  • 2 apples,
  • 2 bunches of black grapes;
  • 1 pinch of cinnamon.

Preparation

Wash the grapes. Peel the apples and figs, centrifuging everything together with the grapes.

Serve with a pinch of cinnamon.

Summer Centrifuge 3

Ingredients for 4 people)

  • 12 plums;
  • 4 peaches;
  • 2 apples;
  • 1 lemon.

Preparation

Peel the plums, peaches and apples, then, centrifuge them. Garnish with a slice of lemon.
