E471 MONO AND DIGLYCERIDES OF FATTY ACIDS

E472a: Esters of acetic acid of mono- and diglycerides

E472b: Esters of lactic acid of mono- and diglycerides

E472c: Esters of citric acid of mono- and diglycerides

E472d: Esters of tartaric acid of mono- and diglycerides

E472e: Esters of diacetyltartaric acid of mono- and diglycerides

E472f: Complex of esters (tartaric, acetic) of mono- and diglycerides

The esters of the mono and diglycerides of fatty acids are food additives obtained from glycerol, natural fatty acids and other organic acids (acetic, lactic, tartaric, citric).

Fatty acids are especially of vegetable origin, but also fats of animal origin could be used.

The compounds obtained are a set of several products and have a composition similar to the partially digested natural fat and esterified with other natural fats.

The mono and diglycerides of fatty acids are used in various products especially with an emulsifying and stabilizing function. In particular, they can be contained in oils and fats, in some types of bread and biscuits, rusks, in baked goods, in preparations for puree, in jams, in baby food, in panettone and in doves.

In biscuits, rusks, panettone and doves, the mono and diglycerides of fatty acids are used in particular to maintain the fragrance and softness of these products.

At the moment there are no known negative side effects for humans as the body metabolizes all components exactly like normal acids and natural fats of food origin.

Dose ADI: 50 mg per kg of body weight.
