E261 POTASSIUM DIACETATE or POTASSIUM ACETATE
Potassium acetate is the potassium salt of acetic acid. It is an acidifying compound that can be of natural or chemical origin.
Acetates are used as preservatives and tampons.
They are contained in many products such as sauces or canned products.
Potassium acetate does not appear to have any negative side effects, since it is a normal component of body cells.
It should be avoided only by those who have vinegar intolerance (however very rare).
Not recommended for people with kidney problems.
