This group of food additives is able to guarantee, for long times, the stability of an emulsion (in fact they are also used in the world of cosmetics and pharmaceutical ointments).
In the food sector, sorbitan esters can be used in baked goods, fillings, desserts, ice creams, cream substitutes, pastry toppings, etc.
E491 SORBITANO MONOSTEARATO
Sorbitan monostearate is a food additive derived from sorbitol and stearic acid.
It has a mainly emulsifying and stabilizing function.
It can be contained in different products (see above).
It does not seem to have any negative side effects for human health.
Dose ADI: 26 mg per kg of body weight.
