E516: CALCIUM SULPHATE
Calcium sulfate - also known as gypsum, selenite or anhydrite - is a natural mineral obtained from calcium salts and sulfuric acid. It appears as a fine, odorless white to slightly white-yellowish powder. Slightly soluble in water, insoluble in ethanol
It has a function of acidity regulator and technological adjuvant also called "plaster of Paris". Among the various functions, we recall those nutrients for yeasts in bread, stabilizers and chelating agents for metals.
It can be contained in various products, such as certain ice creams, in spreads, in canned fruit and vegetables, in flour, in wines, in bread, in liqueurs and in beers.
It can also be included in some pharmaceutical preparations and in the industry for the preparation of gypsum, cement and insecticides.
Calcium sulphate has a high risk at high doses; in fact it could cause intestinal obstructions, but at normal doses it seems to be harmless.
