E353 METATARTARIC ACID
Metatartaric acid is an acid contained in sugar cane and produced from glucose.
This compound is acidifying, stabilizing, regulating acidity and preservative; it is produced both naturally (it can be obtained from grapes, in particular from the stalk) and synthetically. Metatartaric acid can be contained in wine, fruit juices, biscuits, etc.
Being considered a harmless compound, no negative side effects are known.
ADI DOSE: 30 mg per kg of body weight.
