E363 SUCCINIC ACID

Succinic acid is a carboxylic acid naturally present in various fruits (in particular in unripe ones) and in different vegetables (such as lettuce); for industrial use it is synthesized starting from acetic acid.

Succinic acid is a regulator of acidity and also a flavoring. It can be present inside sweets, bakery products, etc.

Succinate derives from succinic acid, which is a fundamental compound of the Krebs cycle from which fumarate is produced by the enzyme succinate dehydrogenase.

At present, no negative side effects are known at normal doses. since - being a constituent of cells - succinic acid is degraded by the body. However, in large doses it could cause digestive problems. For these reasons there are conflicting hypotheses about this additive.

The following 3 additives are all salts of fumaric acid and are respectively:

  • the sodium salt of fumaric acid,
  • the potassium salt of fumaric acid
  • the calcium salt of fumaric acid.
