E325 SODIUM LACTATE
Sodium lactate is the sodium salt of lactic acid, an acid formed naturally by the bacterial fermentation of foods, while industrially it is produced by the bacterial fermentation of starch and molasses. It is possible that these additives (lactates), being precisely derived from this acid, may induce intolerance phenomena in people who do not tolerate lactose.
Sodium lactate is a compound of synthetic origin and - in addition to being an antioxidant - it is also an acidity regulator. Lactic acid (and lactates) are also used as preservatives, mainly against fungi and yeasts. It can be contained in cheeses, confetti, desserts, ice creams, fruit jellies, soups, and fruit preserves.
There are conflicting opinions on its toxicity level. There does not appear to be any negative side effects at the moment, although it is not recommended for use by infants and young children, because they do not yet have the enzymes needed to metabolize these forms of lactates.
