E414 ARABIC RUBBER (or ACACIA RUBBER)

Gum arabic is a natural polysaccharide that is derived from the gummy exudate of " Acacia Senegal " (see photo), a plant belonging to the Leguminosae family typical of Sudan. It is collected in whitish and tasteless pearls, which are then ground and purified.

Gum arabic is a very fine powder containing some minerals, but with no nutritional value. Gum arabic is the oldest among the known natural gums and can be used not only as a food additive, but also in other contexts, for example as a binder in cosmetics, as an adhesive in painting and as an agent in the mummification process. In the food industry, acacia rubber is used as a thickener, stabilizer and support for other additives; it is currently considered safe from a toxicological point of view. It is therefore used in various foods and / or preparations, such as glazes for cakes, puddings, sorbets, ice creams, candies, chewing gum etc.

It is however essential to point out that the consumption of excessive amounts of this additive could cause allergic reactions (in subjects with hyperactivity), flatulence and swelling (due to fermentation by intestinal bacterial microflora).
