Salts of fatty acids are obtained mainly from sources of vegetable origin, but fats of animal origin could also be used.

These additives perform different functions: emulsifier, stabilizer and support; they can also be used as a coating agent.

The aforementioned acids are a complex of acids: stearic, oleic, palmitic and myristinic.

They can be contained in different products.

They are generally considered harmless to the health of the consumer.
