Skimmed and partially skimmed milk

They are milks in which the lipid component has been completely or partially removed. According to current legislation:

- skimmed milk must contain less than 0.3% fat

- semi-skimmed milk between 1.5 and 1.8% fat

The milk is skimmed by centrifugation at 6500-7000 rpm.

Skimmed or semi-skimmed milk is sold pasteurized, UHT, concentrated or powdered.

Skim milk powder is used in many sectors of the food and feed industry (it is used, for example, to make sausages).

From a nutritional point of view, skimmed milks provide less calories and are also dietetically valid because they reduce the introduction of saturated fats.

Skimmed milk is also considered a dietetic milk, indicated for example for those who have hypercholesterolemia problems (since cholesterol, in itself, is a lipid and is therefore largely removed during the skimming process).
