E339 - Sodium phosphate

E339 SODIUM PHOSPHATE

Sodium phosphate is the sodium salt of phosphoric acid; is an acidity regulator and a chelating agent (used to bind metal ions). This product prevents desiccation and is used in powders as an acidity stabilizer, as well as preventing the formation of lumps that can originate in the various products. Furthermore, sodium phosphate has the ability to enhance the action of antioxidants.

To prevent a calcium deficiency, its use is limited (even if the ADI dose is high) as it avidly binds calcium.

ADI DOSE: 70 mg per kg of body weight.

It is divided into several sodium salts of phosphoric acid:

  • E339a MONO-ORTOFOSTATO DI SODIO

Sodium mono-ortho-phosphate is an antioxidant compound synthetically produced from phosphoric acid. It can often be contained in boiled meat, in cake mixes (especially those made with ricotta), ham, wurstel, filling for lemon cakes.

At the moment it does not seem to be responsible for negative side effects.

ADI DOSE: 70 mg per kg of body weight.

  • E339b SODIUM ORTHOPHOSPHATE

Sodium di-orthophosphate is a compound with an antioxidant function produced synthetically from phosphoric acid. It can be added to foods containing butter and / or margarine and boiled meats.

For the moment it does not seem to have any negative side effects.

ADI DOSE: 70 mg per kg of body weight.

  • E339c TRI-SODIUM ORTHOPHOSPHATE

Sodium tri-orthophosphate is a compound with an antioxidant function produced synthetically from phosphoric acid. It can be added to sliced cheeses, boiled meat, melted cheese, desserts of quick preparation, ham, sausage.

For the moment it does not seem to have any negative side effects.
