E535 SODIUM FERROCIANUR

E536 POTASSIUM FERROCIANUR

These two additives are chemically produced and have an anti-caking, stabilizing and metal chelating function. Potassium ferrocyanide comes in the form of lemon-yellow crystals, while sodium ferrocyanide is presented in the form of crystals or yellow crystalline powder.

They can be used in some products, such as in table salt and salt substitutes. In wine they can be used to remove copper, used as a fungicide in vineyards.

These substances are toxic if taken pure, but in the permitted doses they have no negative side effects on human health. For this reason they are authorized in small doses.

ADI DOSE: up to 25 mg per kg of body weight
