E350 SODIUM ILLNESS
Sodium malate is the sodium salt of malic acid (see E296), a natural acid.
Sodium malate is used as a buffer or as a flavoring.
It can be contained in various food products, such as non-alcoholic beverages, pastry products, fruit juices and jams (with the wording as required), etc.

There is no maximum consumption for the moment, but the use of some of its isomers (D, L- and D-isomers) is not allowed in baby food (due to the absence of enzymes needed to metabolize these substances ).
At the moment, there are no known negative side effects concerning the use of sodium malate as a food additive.
