E375 NICOTINIC ACID or NIACINE or VITAMIN B3

Nicotinic acid is a compound obtained either by extraction from natural sources (found mainly in cereals, brewer's yeast, meat) or by chemical synthesis (obtained from nicotine). Nicotinic acid (called niacin), like nicotinamide (also called niacinamide), derives from pyridine and is soluble in water, resistant to heat, light, bases and oxygen.

Nicotinic acid and nicotinamide are absorbed, at gastric and intestinal level, through a sodium-dependent facilitated transport mechanism (in case of low vitamin concentrations) and through a passive mechanism (in case of high vitamin concentrations). Inside our body, nicotinic acid is converted into nicotinamide and, in the tissues, it can be formed from tryptophan (amino acid)

Nicotinic acid is a product with an antioxidant and color stabilizing function. It can be contained in various products such as bread cereals, etc. It can also be used in the pharmaceutical industry as an anti-inflammatory and cholesterol-lowering agent.

Side effects are not known if consumed in normal doses.
