The dodecyl gallate is degraded in the intestine to lauryl alcohol and gallic acid. Gallic acid can cause eczema, stomach problems and hyperacidity.
ADI DOSE: 0.05 mg per kg of body weight.
The latter three molecules (propyl gallate, octyl gallate and dodecyl gallate), resemble tannins, but there is still much discussion about their acceptability.
These food additives can be contained in oils and fats for frying (no olive-pomace oil), in ready-made sauces and ragu, chewing gum, margarine, etc.
They appear to cause irritation to the mouth and mucous membrane of the stomach. Specifically, all three as reported above, are contraindicated especially for asthmatics and for those who are allergic to aspirin.
