E541 SODIUM ACID PHOSPHATE AND ALUMINUM
Sodium and aluminum acid phosphate is a compound of synthetic origin. It comes in the form of an odorless white powder, insoluble in water, soluble in hydrochloric acid.
It can be contained in various foods, such as in flour-based products, in certain cheeses, in some spreads, in some packaged cakes, etc.
At the moment there are conflicting claims on the effects that this additive can have on humans: some researchers think that there may be a contamination of the organism with aluminum, kidney and heart damage, risks of skin infections and mucosal irritations; others, however, consider it harmless to human health.
Therefore, as there is no security on the effects that this additive can have on health, it is not recommended to consume high doses.
ADI DOSE: 1.0 mg per kg of body weight.

- In view of the tendency of aluminum to accumulate in the body following dietary exposure, the AFC Panel considered it more appropriate to establish a tolerable weekly intake (TWI) for aluminum instead of a tolerable daily intake (TDI) . Based on the set of indications that emerged from the studies mentioned above, the scientific group has set a TWI of 1 mg of aluminum / kg bw / week.
