E511 MAGNESIUM CHLORIDE
Magnesium chloride is a synthetic additive, which in foods presents the function of regulating acidity. It comes in the form of very deliquescent scales or colorless, odorless crystals. Very soluble in water, magnesium chloride is easily soluble even in ethanol.
It can be contained in different products, such as sterilized vegetables. It is also used as a source of magnesium in food supplements.
This compound can also cause a laxative effect and, in sensitive people, also kidney problems.
