The DPR 187/01 defines "durum wheat semolina pasta and durum wheat semolina pasta" the products obtained from the extrusion, rolling and subsequent drying of doughs prepared respectively and exclusively with durum wheat semolina and semolina and water.

The only ingredients allowed for the production of pasta in Italy are therefore the semolina (or semolina) and water, except for special pasta (with egg, with filling, etc.); addition of salt (sodium chloride) up to a maximum of 4% on the dry product is also allowed. It follows that the calories of the various types of pasta are rather uniform, regardless of the manufacturer, with fluctuations normally lower than 5% for equal-grade and format pasta. For the most common pasta, the dry industrial one, we talk about 360 calories per 100 grams. The various seasonings greatly enrich the pasta, influencing caloric and nutritional values; if added respecting the rules of healthy Italian food, they contribute to making it a complete and balanced dish.
