E415 GUM of XANTHAN
Xanthan gum is a natural polysaccharide derived from the fermentation of carbon hydrates (sugars) with the culture of the bacterium Xanthomonas campestris .
Xanthan gum is a compound with a thickening, stabilizing, gelling and support function for synthetic additives.
It can be contained in various products, such as sauces, pastry creams, baked confectionery products, puddings, chewing gum, sugar-coated candies, candies, dried fruit, pretzels, dessert liquids, seafood sauces, packaged salads.
At the doses normally used, no negative side effects are known; however, it has been found that the long use of xanthan gum at high doses can cause flatulence and swelling in all subjects, and in those more sensitive also asthma crises, skin reactions and respiratory allergies.
