E315 ERITORBIC ACID or ISO-SCORBIC ACID
Eritorbic acid is the isomer of ascorbic acid. While presenting the same chemical formula, isoascorbic acid does not boast the same vitamin and improvement properties as flour; in fact, its biological activity is 1/20 compared to that of vitamin C; the eritorbic acid is synthetically produced and has an antioxidant and regulatory function.
It could present, as a contraindication, the suppression of the assimilation of vitamin C.
Usually, this additive is used in fish and canned or frozen meat, and in certain types of salami or meat.
At the moment there are not many studies on this substance, so to avoid risks it is recommended not to exceed the consumption of eritorbic acid.
